Ingredients

  • 3 cups of rehydrated refried beans
  • ½ cup of water
  • 3 cloves garlic, crushed
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • 1 tablespoon olive oil
  • ½ cup onion, chopped
  • ½ teaspoon cumin powder
  • 2 tablespoons cilantro, chopped
  • Juice of ½ lime

Method

  1. Warm the olive oil in a medium saucepan. Add onions and salt and cook while occasionally stirring until they soften.
  2. Add the garlic, chili, and cumin powder. Cook as you stir for about 30 seconds. Add the beans and water, stir, cover, and cook for about 5 minutes.
  3. Lower the heat and continue to cook the beans. Stir every 3 minutes.
  4. Remove from the heat. Stir in cilantro and lime juice. Taste and add more lime juice or salt as per your preference. You can also add some water if the beans are too dry and combine. Cover the lid until you’re ready to serve.

Meat Free Quesadillas2

These meat-free quesadillas are easy and cheap to make. They only require 20 minutes to make.

Ingredients

  • 2 cups refried beans mix
  • 1 tbsp oil
  • 1 onion, chopped
  • 2 cloves of garlic, chopped
  • 1 tsp cumin seeds
  • 8 flour tortillas
  • 1 tablespoon sunflower oil
  • 1 cup fresh tomato salsa
  • 2 teaspoon paprika
  • Sour cream
  • A handful of coriander
  • ½ cup cheddar cheese, coarsely grated

Method

  1. Heat the oil in a frying pan. Toss in the onion and garlic and cook for about 2 minutes.
  2. Add cumin seeds and cook for another minute.
  3. Add the rehydrated beans, paprika, and water and cook.
  4. Mash the beans with a potato masher to make a rough puree and season.
  5. Spread the beans on four of the tortillas. Sprinkle some cheese and coriander on them. Spread some salsa on each then top with the remaining 4 tortillas. Wipe out pan with paper towel
  6. Heat the cleaned frying pan once again. Cook each of the 4 quesadillas for 1-2 minutes on each side until they are crisp and golden and the cheese has melted.
  7. Cut the tortillas into wedges. Add some extra salsa and use sour cream for dipping.

Baked Refried Beans3

Use precooked dehydrated refried beans to reduce the preparation time. You don’t want to soak your beans for 24 hours to cook them. This works perfectly for those spontaneous side dishes preparation.

Ingredients

  • 2 cups rehydrated refried beans
  • 1 onion, chopped
  • 3 garlic cloves, chopped
  • 1 teaspoon canola/olive oil
  • 1 teaspoon hot sauce
  • ¼ teaspoon garlic powder
  • ½ teaspoon chili powder
  • ½ teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • Cilantro or diced tomatoes for garnishing
  • ½ cup shredded cheese

Method

  1. Preheat your oven to 350 degrees. Prepare your 8x8 or 9x9 baking dish with oil
  2. Add oil to a frying pan and heat over medium heat. Toss in onions and garlic and sauté them till soft for about 4 minutes.
  3. Add the rehydrated beans to a mixing bowl. Add garlic powder, chili powder, cumin, salt, and onion powder and stir. Toss in the sautéed onions and garlic. You can add hot sauce or taco sauce if you wish.
  4. Pour the mixture to the baking dish. Sprinkle shredded cheese on top. Cover the dish with a foil.
  5. Bake for 10 minutes. Remove the foil, and then place it back to the oven for another 5 minutes.
  6. Garnish with diced tomatoes or a few cilantro leaves. Enjoy

This recipe with dehydrated refried beans is easy to make. It takes about 20 minutes.

Ingredients

  • 10 warm corn tortillas
  • 2 cups shredded chicken
  • 2 cups refried beans
  • 1 cup shredded cheese

Toppings

  • Chopped cilantro
  • Low-fat sour cream/ additional salsa

Method

  1. Preheat the oven to 350 degrees.

  • 2 cups refried beans
  • 1 pound ground beef

Method

1. Strawberry Mousse

Requiring just five ingredients, this Valentine's Day recipe can be a go-to for everyone who has very little time but still wants to impress their beau (or boo). Sometimes keeping it simple yields the best results.

Ingredients:

  • In a bowl, add the strawberries and enough water to cover them. Let them hydrate for 15 minutes, remove excess liquid, and puree them using a fork.
  • Next, add the sugar, lime juice, and strawberries to a saucepan and place over medium heat. Cook them, frequently stirring, until you are left with ¾ cup worth of mixture. Set aside to cool.
  • Add the heavy cream and vanilla extract to a bowl and beat until stiff peaks form. Stir in the strawberry mixture and serve it in small cups.

Ingredients:

  • ½ cup all-purpose flour
  • ½ cup coconut oil, melted
  • ½ cup maple syrup
  • 1/3 cup unsweetened cocoa powder
  • ¼ cup freeze dried cherries
  • 3 eggs
  • 3 tbsp hazelnuts, chopped
  • ¼ cup dark chocolate chips
  • ½ tsp vanilla extract
  • ½ tsp baking powder
  • ¼ tsp salt

Directions:

  • Add half a cup of water to a bowl and let the cherries soak in it for about 15 minutes. Then, squeeze away any excess liquid and set them aside.
  • Next, preheat the oven to 300oF and line a baking pan with parchment paper.
  • In a large bowl, add the coconut oil and eggs and blend with an electric mixer until frothy.
  • Stir in the maple syrup and vanilla extract and mix again.
  • Now, add the flour, baking powder, and salt and blend once again until you form a batter.
  • Fold in the hazelnuts, chocolate chips, and cherries, and spread the batter into the pan.
  • Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  • Once ready, remove from the oven, let cool, and cut into square pieces.
  • (Optional) You could drizzle the brownies with red candy melts.

3. Chocolate Raspberry Panini

Serving paninis on such a special occasion may sound silly. But, between its fancy ingredients and intricate flavor combos, this adult-ish version tastes 10x better than the paninis we used to down as kids – so, it could make your V-Day one to remember.

Ingredients:

  • 1 loaf Ciabatta
  • ¼ cup freeze dried raspberries
  • 1/3 cup almond butter
  • 2 tbsp maple syrup
  • ½ cup bittersweet chocolate, melted
  • Pinch of cinnamon
  • 2-3 tbsp unsalted butter

Directions:

  • Fill a small bowl with lukewarm water and add the raspberries. Let them soak for 15 minutes or until they hydrate.
  • Meanwhile, cut the loaf into four rectangles. Then, using your hands, open up each rectangle, creating some sort of bread pocket with each.
  • In a bowl, add the almond butter, maple syrup, and cinnamon, and spread 2-3 tbsp of the mixture onto each rectangle.
  • Top with the raspberries, brush each bread pocket with butter and pop them into the press.
  • Grill for 2-3 minutes and serve. If you feel like it, you can drizzle them with more chocolate and crumbled freeze dried fruit.

4. Berry Flapjacks

When it comes to love, there are no rules – which is why Valentine's Day is the perfect day to serve breakfast for dinner. Your better half will never see that coming, and chances are he/she will remember it for a long time.

Ingredients:

  • 1 cup flour
  • ¾ cup Berry De-lite Blend
  • 2 tbsp coconut sugar
  • 2 tbsp unsalted butter
  • 1 cup milk
  • 1 egg
  • ½ tsp baking soda
  • ¼ tsp salt

Directions:

  • Add 1 ½ cup of water to a bowl and soak the Berry De-lite berries for about 15 minutes.
  • In a separate bowl, mix the dry ingredients (flour, coconut sugar, baking soda, and salt).
  • Whisk in the egg, milk, and berries, one at a time.
  • Heat a non-stick pan and melt the butter over medium heat.
  • Pour one-third of the batter onto the pan and cook for a couple of minutes. Then, flip the pancake and cook for another 1-2 minutes until the pancake is cooked through.
  • Repeat the last step with the remaining batter.
  • Top with crumbled freeze dried fruit.
  • Serve with maple/chocolate syrup or as is.

5. Chocolate-Covered Red Grape Truffles

Despite its fancy flair, this Valentine's Day recipe is, hands-down, one of the easiest things you'll ever have to make for your honey. And if you're having second thoughts about the red grapes (you know, because scoring some in the middle of February is almost impossible), note that our freeze dried red grapes are available all-year-round. Ingredients:

  • 3 tbsp freeze dried grapes
  • ½ cup Medjool dates, pitted
  • ½ cup almond butter
  • 1 tsp vanilla extract
  • Pinch of salt
  • ½ cup dark chocolate
  • 1 tbsp coconut oil

Directions:

  • Place the red grapes in a food processor and blend until they turn into a chunky powder.
  • Then, add the dates and pulse again in long bursts until you form a thick paste. You may need to stop at times and scrape the sides with a spatula.
  • Then, add the almond butter, vanilla extract, and salt and pulse until you have a smooth "dough."
  • Line a baking sheet with parchment paper.
  • Using a spoon, scoop spoonfuls of the dough and place them on the baking sheet. Put them in the freezer for about 15 minutes.
  • Now, add the chocolate to a heatproof bowl and place it over a pot with simmering water (double boiler). Once melted, stir in the coconut oil.
  • Remove the truffles from the freezer and, with the help of two forks, dunk each one in the chocolate and roll it around to make sure it's evenly coated.
  • Place them on the baking sheet and freeze once again for 10 minutes. Enjoy!

  • In a bowl, add ½ cup of lukewarm water and the papaya and let it hydrate for 15 minutes. Then, squeeze away all liquid and transfer them to a food processor.
  • Meanwhile, preheat the oven to 350oF and line a muffin tin with paper muffin cups.
  • Now, run on the food processor to puree the papaya and gradually add the maple syrup, eggs, vanilla extract, and coconut oil.
  • Once they are combined, add the rest of the ingredients and process until a batter is formed.
  • Fill the muffin cups with the batter ¾ of the way and top with crushed nuts or coconut flakes, i.e., walnuts or pecans.
  • Bake for 10-12 minutes or until a toothpick inserted comes out clean.

3. Chicken and Papaya Stir-Fry

It's easy to assume that such a gourmet combo would take hours to prep and assemble, but this chicken and papaya stir-fry is actually a one-skillet job. Plus, it's served with a bunch of delicious veggies on the side, so you're one step ahead of your healthy eating resolutions.

Ingredients:

  • 1 lb boneless chicken breast meat, cut in bite-sized strips
  • 1 cup freeze dried papayas
  • 1 cup freeze dried broccoli
  • 1 red bell pepper, seeded and cut into strips
  • 2 tbsp olive oil
  • 1 tbsp fresh ginger, grated
  • 1 large onion, peeled and grated
  • ½ tsp dehydrated garlic
  • ¼ cup of orange juice
  • 2 tbsp lemon juice
  • 3 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • ½ tsp cornstarch
  • Salt and pepper, to taste

Directions:

  • Add the papaya and broccoli to a bowl along with two cups of lukewarm water and set aside to hydrate for about 15 minutes.
  • In a separate bowl, pour the hoisin and soy sauces and stir in the chicken until all pieces are coated. Set aside to marinate.
  • Once the papaya is hydrated, and the chicken is marinated, heat the olive oil in a skillet over medium heat and sauté the ginger, onion, and garlic.
  • Then, stir in the chicken, its juices, and the rest of the ingredients one by one (except for the cornstarch).
  • Bring them to a boil and simmer for 3-5 minutes or until the chicken is cooked through.
  • Then, add the cornstarch and cook for 2 more minutes until the sauce thickens.

4. Som Tam (Green Papaya Salad)

Despite its humble looks, Som Tam, Thailand's most feisty salad, was recently dubbed one of "the world's 50 most delicious foods"(5) by CNN Travel. The dish consists of a flavorful papaya/greens combo soaked in a flavorful dressing and occasionally paired with dried shrimp. Could it get any better?

Ingredients:

  • ½ cup freeze dried papayas
  • 2 medium tomatoes, coarsely chopped
  • 2-3 leaves lettuce, coarsely chopped
  • ½ cup string beans
  • 2 garlic cloves
  • 2 tbsp salted peanuts
  • 1 fresh chili pepper, sliced
  • 2 tbsp lime juice
  • ½ tbs fish sauce
  • ½ tbsp sugar
  • Salt, to taste
  • 2 tbsp dried shrimp (optional)

Directions:

  • In a bowl, add the papaya and one cup of water. Let it soak until it hydrates.
  • Next, add all the ingredients (except for the tomatoes, lettuce, and string beans) to a food processor and blend on medium until you form a paste.
  • Pour the paste into a bowl and then stir in the papaya, the tomatoes, the lettuce, and the string beans — season to your taste.

5. Cheesy Papaya Quesadilla

Pairing papaya with cheese may sound like an ill-fitting combo, but, in reality, the sweetness of the fruit pairs great with cheese's salty flavor. However, make sure you opt for mild-tasting varieties such as Queso Fresco and Feta cheese because strong flavors may throw this balance out of whack.

Ingredients:

  • 6 whole-wheat tortillas
  • 1 cup freeze dried papayas
  • 1 ½ cup Chevre cheese, crumbled
  • 1 red bell pepper, thinly sliced
  • 1 small onion, peeled and finely chopped
  • 4 tbsp canned corn (optional)
  • 4 tbsp olive oil

Directions:

  • Add the papaya and one cup of water to a bowl and let it soak until it hydrates (for about 15 minutes).
  • Meanwhile, heat two tablespoons of olive oil over medium heat and sauté the onion and the bell pepper. Set aside.
  • While he skillet is hot, soften the tortillas by placing them in there for about 5 seconds on each side.
  • Distribute the papaya, Chevre, bell pepper, onion, and corn all across the tortillas, and fold.
  • Brush them with the remaining two tablespoons of olive oil and heat them in a skillet until they brown on both sides.
  • Serve them with your favorite dip.

Cauliflower Soup1

This cauliflower soup recipe takes a short time to prepare. It is perfect when you want a light and tasty meal. Top up with crispy chorizo and croutons.

Ingredients

  • 1 cup freeze-dried cauliflower florets, rehydrated
  • 2 tablespoon olive oil
  • 2 tablespoon double cream
  • 1 chopped onion
  • Chopped parsley
  • 2 inch long chorizo
  • 2 finely chopped garlic cloves
  • 1 slice crusty bread
  • 2 cups stock (beef, chicken or vegetable)

Method

  1. Heat half the olive oil in a saucepan over medium heat. Add onions and salt, cook until soft for about 5 minutes. Add in the cauliflower and half the garlic. Stir properly then add the stock. Simmer for about 10-12 minutes until the cauliflower is tender.
  2. Peel and chop the chorizo into small pieces. Toast the crusty bread then cut it into crouton size pieces.
  3. Heat the rest of the olive oil in a pan. Fry the chorizo until crisp. Add the croutons and the remaining half of the garlic. Cook for a minute until everything is coated in the chorizo oil. Then set aside.
  4. Blitz the soup with the cream using a stick blender. Season to your taste, reheat if you need it, and then divide and pour into two bowls. Add parsley to the chorizo and croutons then top the soup generously.

Sweet Potato Soup2

Take a break from mashed sweet potato and enjoy this silky soup.

Ingredients

  • 4 slices of bacon, chopped
  • 3 cups freeze dried sweet potatoes
  • 1 medium chopped red onion
  • 2 minced garlic cloves
  • ½ teaspoon black pepper
  • A pinch of cayenne
  • 4 cups chicken broth
  • Juice of 1 lime
  • 1 tablespoon salt

Method

  1. Cook bacon in a large pot over medium heat. Place in a paper towel and reserve 1 tablespoon of fat.
  2. Cook onions in a pot until slightly soft. Add the garlic and cook for two minutes, then season with salt, pepper, and cayenne (optional).
  3. Rehydrate the freeze-dried sweet potatoes then add to the mixture alongside the stock. Bring to a boil then simmer in low heat until the sweet potatoes are tender, for about 30 minutes.
  4. Transfer to a blender in batches and blend till smooth. Stir in the lime juice. Serve while warm topped with chopped bacon.

Ingredients

  • 1 3/4 cup of freeze fried broccoli, rehydrated
  • 4 1/4 of broth (chicken or vegetable)
  • 1 finely chopped onion
  • 2 tablespoon rapeseed oil
  • 1 sliced leek
  • 1 medium-sized potato, diced
  • 1-2 tablespoons of butter
  • 1 sliced celery stick
  • 2/3 cup crumbled blue cheese

Method

  1. Heat the rapeseed oil in a saucepan. Add the onion and cook on medium heat until soft.
  2. Add celery, leek, potato, and butter. Mix until the butter melts. Cover with a lid and cook for about 5 minutes.
  3. Pour in the broth and broccoli. Cook for 15-20 minutes until the vegetables are soft.
  4. Transfer to a blender and blitz until smooth. Add in the crumbled cheese and allow the crumbs to remain and serve.
