- Mix ½ cup of Instant Hummus Mix (firmly packed as if measuring brown sugar).
- Add ⅔ cup of water, either HOT or COLD.
- Add 1 tablespoon of extra virgin olive oil (EVOO).
- Whisk thoroughly to combine. To thicken and enhance flavor, refrigerate for 15 minutes.
- Before serving, whisk thoroughly.
Serve with carrots, celery, pita and more! Or use as a spread on sandwiches or wraps.
Once prepared, keep refrigerated.

This is wonderful hummus - enough lemon in it to taste the lemon, but not enough to be overpowering. Great flavor, plus quick and easy to make. No waste, no spoilage, since I can make small amounts at a time. I use it as a sandwich spread, as a spread for 'wraps' (sometimes using lettuce as the 'wrapper,' sometimes a thin flatbread), or smear it in a pita with shredded vegetables. I also use it as a meal - carrot sticks and hummus is my favorite, but other vegetables are good, too. Family members are of 'mixed' opinions on hummus - some won't touch it, and others really like it. The ones who like hummus all agree that this is the best (other than what we made ourselves). Even the 4-year-olds in the family enjoy eating this hummus.
