Healthy and Flavorful Burrito Recipes to Satisfy Your Cravings

Whether from a local food cart or Chipotle, burritos have always been a solid meal option for people on the go. However, the wrap is more than just a last resort meal for hard pressed work lunches; its hearty ingredients make it a satisfying dinner for the entire family. After all, who can say no to a mix of rice, beans, and meat slathered with salsa or sour cream and wrapped in a warm tortilla? So, whether you like chicken, beef, fish, or veggies in your wraps, we rounded up our five favorite burrito recipes to jazz up your family dinners and celebrate National Burrito Day(1) (April 6th) all in one go.

 1. Chicken Cauliflower Burrito

Chicken bits, bite-sized cauliflower pearls, and savory Mexican cheese join forces in this burrito recipe to create and filling and easy weekday dinner. The secret behind its irresistible taste is that all the ingredients are cooked in a soy-infused tomato sauce. Genius, right?

Ingredients:

Instructions:

  1. Add the broccoli and chicken to two bowls and fill them with enough water to coat the food. Soak for 15 minutes. Once hydrated, squeeze away excess liquid and set aside.
  2. Meanwhile, cook the rice. Add 1 1/4 cups of water and rice to a pot and simmer over medium heat. Once the water starts bubbling, turn the heat low, cover it with a lid, and cook for 15 minutes or until most of the water evaporates. Remove from the heat and let the rice steam covered for another 15 minutes. Uncover and fluff with a fork.
  3. Add the olive oil to a saucepan and heat over medium heat. Add the onion and garlic and sauté for 2 minutes. Add the chicken and bell peppers and sautée for another 10 minutes. Pour in the tomato and soy sauce and bring to a simmer. Stir in the cauliflower and cook until tender (about 7 minutes). Once cooked, season with salt and pepper and set aside.
  4. To assemble the burritos, place each tortilla onto a piece of foil and divide the rice and chicken cauliflower mixture between them. Top with the cheese and sour cream, roll them up and serve.

 2. Beef Potato Burrito

Take your typical beef burritos up a notch by pairing them with bite sized potatoes. Since it's easy to make, it's a perfect choice for busy weekdays or when you're pressed for time.

Ingredients:

Instructions:

  1. Add the beef and potatoes into two bowls and fill them with enough warm water to coat. Soak for 15 minutes. Once hydrated, squeeze away excess liquid and set aside.
  2. Meanwhile, make the rice. Add 1 1/4 cups of water and rice to a pot and simmer over medium heat. Once the water starts bubbling, turn the heat low, cover it with the lid, and cook for 15 minutes or until most of the water evaporates. Remove from the heat and let the rice steam covered for another 15 minutes. Uncover and fluff with a fork.
  3. Add the olive oil to a saucepan and heat over medium heat. Add the beef and sauté for 10 minutes. Add the tomato sauce and season with paprika, garlic, salt, and pepper. Then, add the sweet potatoes and cook for another 5 minutes until they are fork-tender. Once cooked, set aside.
  4. To assemble the burritos, place each tortilla onto a piece of foil and divide the rice and beef-sweet potato mixture between them. Top with the cheese and sour cream, roll them up and serve.

 3. Pinto Bean Cheese Burrito

No meat, no problem! That's the idea behind this easy burrito recipe that skimps on meat but is big on flavor thanks to a hefty serving of spicy pinto beans. The handfuls of cheese in these wraps also work wonders when it comes to taste.

Ingredients:

  • 3/4 cup dehydrated pinto beans
  • 1 cup basmati rice
  • 1 cup Cheddar cheese, shredded
  • 2 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried garlic (granulated)
  • 1/2 tsp red pepper flakes (optional)
  • 1 cup baby tomatoes, sliced in half
  • 1/4 cup sour cream
  • 4 large tortillas
  • Salt & pepper, to taste

Instructions:

  1. Add the beans to a bowl, filling it with enough water to coat. Soak for 30 minutes. Transfer to a pot filled with water and cook until fork-tender (about an hour). Drain and set aside.
  2. Meanwhile, make the rice. Add 1 1/4 cups of water and rice to a pot and simmer over medium heat. Once the water starts bubbling, turn the heat low, cover it with a lid, and cook for 15 minutes or until most of the water evaporates. Remove from the heat and let the rice steam covered for another 15 minutes. Uncover and fluff with a fork.
  3. Add the olive oil to a saucepan and heat over medium heat. Add the beans and spices, stir to combine, and cook for 5 minutes.
  4. To assemble the burritos, place each tortilla onto a piece of foil and divide the rice and beans between them. Top with the cheese, sour cream, and tomatoes, roll them up and serve.

 4. Old Bay Shrimp Burrito

Old Bay Seasoning and shrimp just go together. But what if you packaged all that goodness in a tortilla and paired it with rice, cheese, and salsa? The answer lies in the following burrito recipe. FYI, you're going to love it!

Ingredients:

  • 4 1/2 cups shrimp, peeled and deveined with tails removed
  • 2 tbsp olive oil
  • 1 tsp dried garlic (granulated)
  • 1/4 cup organic dried green bell pepper
  • 1/2 tsp Old Bay seasoning
  • 1/2 tsp lime juice
  • 1 cup basmati rice
  • 1 cup Mexican cheese, shredded
  • 1 cup store-bought salsa
  • 4 large flour tortillas
  • Salt & pepper, to taste

Instructions:

  1. Add the olive oil to a saucepan and heat over medium heat. Add the bell pepper and garlic and sautée for 3 minutes. Stir in the shrimp, lime juice, Old Bay seasoning, salt, and pepper. Cook for 5 minutes or until the shrimps turn opaque and are cooked through. Remove from the heat and set aside.
  2. Meanwhile, make the rice. Add 1 1/4 cups of water and rice to a pot and simmer over medium heat. Once the water starts bubbling, turn the heat low, cover it with a lid, and cook for 15 minutes or until most of the water evaporates. Remove from the heat and let the rice steam covered for another 15 minutes. Uncover and fluff with a fork.
  3. To assemble the burritos, place each tortilla onto a piece of foil and divide the rice and shrimp between them. Top with the cheese and salsa, roll them up and serve.

 5. Vegetarian Burrito

It's always a treat for the taste buds when cheese and carbs (rice) come together. But in this burrito recipe, we add a little protein to the mix in the form of mushrooms and black beans to make a dish that's both tasty and healthy.

Ingredients:

  1. Add the beans to a bowl, filling it with enough water to coat. Soak for 30 minutes. Transfer to a pot filled with water and cook until fork tender (about an hour). Drain and set aside.
  2. Add the mushrooms and 2 cups of warm water to another bowl and soak for 15 minutes. Once hydrated, squeeze away excess liquid and set aside.
  3. Meanwhile, make the rice. Add 1 1/4 cups of water and rice to a pot and simmer over medium heat. Once the water starts bubbling, turn the heat low, cover it with a lid, and cook for 15 minutes or until most of the water evaporates. Remove from the heat and let the rice steam covered for another 15 minutes. Uncover and fluff with a fork.
  4. Add the olive oil to a saucepan and heat over medium heat. Add the mushrooms and spices and sautée for 10 minutes or until fork-tender. Mix the salsa, rice, and black beans well to combine.
  5. To assemble the burritos, place each tortilla onto a piece of foil and divide the mushroom mixture between them. Top with sour cream, roll them up and serve.
