Ingredients

  • 3 pounds Freeze-dried sweet potatoes
  • ¼ cup margarine/butter
  • 2 tablespoons orange juice
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 2 cups marshmallows
  • ¼ cup brown sugar
  • Cooking spray

Preparation

  • Preheat the oven to 375 degrees
  • Put the pieces of freeze dried sweet potatoes in a large pan.
  • Add 2 cups of boiling water to rehydrate the sweet potatoes. Simmer for 10-20 minutes Heat just until they soften. Remove from heat and drain. Allow it to cool slightly.
  • Blend the sweet potatoes together with all ingredients in a food processor or using an electric mixer in a large bowl. You can also use a potato masher.
  • Spread the mixture evenly into a 9x13 inch baking tin coated with cooking spray. Sprinkle marshmallows on top.
  • Bake for 375 degrees F for about 20 – 25 minutes in the oven. Ensure that it’s well heated, and the marshmallows turn golden brown.
  • Serve immediately. Enjoy!
