Ingredients
- 3 pounds Freeze-dried sweet potatoes
- ¼ cup margarine/butter
- 2 tablespoons orange juice
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 2 cups marshmallows
- ¼ cup brown sugar
- Cooking spray
Preparation
- Preheat the oven to 375 degrees
- Put the pieces of freeze dried sweet potatoes in a large pan.
- Add 2 cups of boiling water to rehydrate the sweet potatoes. Simmer for 10-20 minutes Heat just until they soften. Remove from heat and drain. Allow it to cool slightly.
- Blend the sweet potatoes together with all ingredients in a food processor or using an electric mixer in a large bowl. You can also use a potato masher.
- Spread the mixture evenly into a 9x13 inch baking tin coated with cooking spray. Sprinkle marshmallows on top.
- Bake for 375 degrees F for about 20 – 25 minutes in the oven. Ensure that it’s well heated, and the marshmallows turn golden brown.
- Serve immediately. Enjoy!
