Grilled Chicken Breasts

Chicken breasts are lean and delicious, making them perfect for a well-grilled dish. This chicken recipe is easy and quick to make.

Ingredients

  • 1/4 cup balsamic vinegar
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons brown sugar
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 chicken breasts
  • Salt to taste
  • Freshly ground black pepper
  • Freshly chopped parsley, for garnish

Method

  1. Whisk balsamic vinegar, brown sugar, olive oil, garlic, and dried herbs, in a medium-sized bowl. Add season and pepper to your preference. Set aside ¼ cup for basting.
  2. Put the chicken in the bowl and mix thoroughly, preferably with your hands. Allow it to sit in the marinade for between 20 minutes and up to overnight. 
  3. Preheat the grill to 350° F. Add the chicken and allow it to grill, basting with set aside marinade. Cook each side for 6 minutes per side before turning it. 
  4. Garnish with parsley or coriander leaves
  5. Serve with an accompaniment of your choice.

Chicken Shawarma

This amazing chicken dish was invented in Turkey but grew popular in the Middle East, where it got the name ‘Shawarma.’ Shawarma is the Arabic word for ‘turning.’ It is made by stacking thin meat slices on an upright rod, which is slowly rotated before a fire. The meat is shaved off as it cooks from the outside.

Ingredients

  • 1/2 cups extra-virgin olive oil
  • 1 tablespoon 1 lemon juice
  • 3 cloves garlic, ground
  • ½ teaspoon salt
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon Turmeric; ground
  • 1/4 teaspoon cinnamon; ground
  • 1/4 teaspoon cayenne pepper
  • 2 lb boneless skinless chicken thighs
  • 1 large onion, thinly sliced
  • 1/2 cups Greek yogurt 
  • Juice of 1/2 lemon
  • 1 tablespoon extra-virgin olive oil
  • 2 cloves garlic, grated
  • Salt to taste
  • Pinch of crushed red pepper flakes
  • Cherry tomatoes halved
  • Cucumber, thinly sliced

Method

  1. Whisk the oil, lemon juice, garlic, and the seasonings in a large bowl. Put in the chicken and mix thoroughly. Marinate for between 2 hours and up to overnight. 
  2. Remove from the refrigerator and preheat oven to 425° F. Grease a large baking sheet with cooking spray. Then add onion to the marinade and mix.
  3. Remove chicken and onion from the marinade and place on the baking sheet. Then bake for 30 minutes or until chicken is golden and cooked through.
  4. Let chicken cool and then thinly slice. 
  5. To make the yogurt sauce, whisk yogurt, lemon juice, oil, and garlic together in a large bowl. Add some salt and the red pepper flakes to preference.
  6. To make as a pita, line warmed pitas with chicken, tomatoes, onion, romaine, cucumber, and the pre-made yogurt sauce.

Chicken Teriyaki

Teriyaki is a blend of soy sauce, ginger, saké (Rice vinegar), and other assorted seasonings. It’s mostly used in Japanese cooking as a chicken marinade or as a glaze for fish and beef.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 lb. boneless skinless chicken breasts, cubed
  • Salt
  • Black pepper; freshly ground
  • Sesame seeds
  • Sliced green onions

For The Sauce

  • 2 teaspoon corn starch
  • 1/4 cup soy sauce
  • 2 tablespoon rice wine vinegar
  • 2 tablespoon honey
  • 3 cloves garlic,
  • 1 teaspoon sesame oil
  • 2 teaspoon ginger, finely ground

Method

  1. Whip the soy sauce, vinegar, oil, honey, garlic, ginger, and corn starch in a large bowl.
  2. Heat the oil in a large pan over medium heat. Add chicken to the pan and add some salt and pepper. Let it cook for 10 minutes or until it is golden brown.
  3. Drizzle the sauce over the chicken and let it simmer for 5 minutes or until the sauce has thickened and chicken is well cooked through. Garnish with sesame seeds and green onions and serve with rice.

Baked Drumsticks in Lemon and Garlic

Drumsticks chicken recipes are some of the most sought and loved.

Ingredients

  • 1/4 cup soy sauce
  • 1/4 cup extra-virgin olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon freshly squeezed lemon juice
  • ¼ teaspoon Salt
  • Black pepper, freshly ground
  • A pinch of red pepper flakes; crushed
  • 3 lbs chicken drumsticks (about 8 pieces)

Method

  1. Mix the soy sauce, oil, garlic, and lemon juice in a large bowl. Season the mixture with the desired amount of salt, pepper, and a pinch of red pepper flakes.
  2. Thrown in the drumsticks and blend well. Put in the refrigerator and let it marinate for at least 30 minutes. You can let them rest overnight for the following day’s cooking.
  3. Remove from the fridge.  Preheat the oven to 450° F. Set the chicken on a baking sheet and bake for 20 to 25 minutes, or until golden. Flip them halfway through to let them cook on all sides.
  4. Serve alone or with a preferred side dish.

Keto Chicken Salad

Chicken recipes can also be excellent for you if you have adopted the keto diet.

Ingredients

  • 1/2 cup mayonnaise
  • 1 tablespoon mustard
  • 1 tablespoon red wine vinegar
  • 1/4 cup shallot, finely chopped
  • 1 stalk celery, thinly sliced
  • 1 teaspoon dried oregano
  • Pinch of pepper
  • Salt
  • 3 cups cooked chicken; shredded
  • 4 strips bacon, cooked and crumbled
  • 1 avocado, diced
  • Butterhead lettuce, for serving

Method

  1. Combine the mayonnaise, mustard, vinegar, shallot, and celery. Add the spices.
  2. Fold in the chicken, bacon, and avocado. 
  3. Serve in lettuce cups.
