Spiced Sweet Potato Casserole with Marshmallows

Serves: ~6 | Prep Time: 10 min + soak | Cook Time: 25 min

Ingredients:

  • 2 cups dried sweet potato pieces (yields ~5–6 cups cooked)

  • ¼ cup butter or margarine

  • 2 tbsp orange juice

  • 1 tsp ground cinnamon

  • 1 tsp ground nutmeg

  • ¼ cup brown sugar

  • 2 cups mini marshmallows

  • Cooking spray

Instructions:

  1. Rehydrate the sweet potatoes
    Place the dried sweet potatoes in a large saucepan and cover with water. Bring to a boil, then simmer gently for 25–30 minutes, until soft and mashable. Drain and let cool slightly.

  2. Mash & flavor
    In a large bowl, mash the sweet potatoes. Stir in butter, orange juice, cinnamon, nutmeg, and brown sugar until well combined.

  3. Assemble
    Preheat the oven to 375°F. Lightly grease a 9×13 inch baking dish with cooking spray. Spread the sweet potato mixture evenly in the pan.

  4. Top & bake
    Sprinkle mini marshmallows over the top. Bake for 20–25 minutes, or until the dish is heated through and the marshmallows are golden and bubbly.

  5. Serve
    Let rest 5 minutes before serving. Serve warm and enjoy!
