- 6 tablespoons unsalted butter (melted)
- 1 teaspoon cornstarch
- 2 teaspoons freshly squeezed lemon juice
- 1 tablespoon granulated sugar

- ½ cup powdered sugar
- ½ teaspoon vanilla extract
- 1 tablespoon milk
Directions
- Place a rack in the center of the oven and preheat to 375 degrees F.
- Line an 8-inch baking pan with parchment paper.
- Combine the dry ingredients: oats, flour, sugar, ginger, and salt. Pour in the melted butter and stir until it forms clumps. Ensure that the dry ingredients are evenly moistened. Divide the mixture into two.
- Spread the first in the bottom of the prepared tin into an even layer. Next, spread half of the strawberries over the crust. Next, sprinkle the cornstarch evenly over the top, and then sprinkle on the lemon juice and half of the sugar.
- Scatter on the remaining berries, then the remaining sugar. Finally, sprinkle the other half of the crumbs mixture evenly over the top.
- Bake for about 40 minutes, until the fruit is bubbly and the crumb topping turns golden. Place the pan on a wire rack to cool.
For the glaze
- Whisk together the powdered sugar, vanilla, and milk in a medium bowl until smooth. You can add more milk if you prefer a thinner consistency.
- Remove the bars from the pan to remain on the parchment paper. Drizzle the glaze on top, then slice, and serve.

Ingredients
- 3 cups freeze dried sweet potatoes
- 2 sticks soft butter
- 8 eggs
- 1 cup brown sugar
- 2 teaspoon cinnamon
- 1 teaspoon baking soda
- 2 cups cream
- 4 cups cornmeal
Directions
- Preheat the oven to 350 degrees F.
- Rehydrate the sweet potatoes. Place them on a baking sheet. Prick holes in the sweet potatoes using a fork. Bake in the oven for about 10 minutes. Set aside to cool.
- Mash the sweet potatoes in a mixing bowl. Stir in the butter.
- Beat the eggs in another bowl. Add in sugar, cinnamon, and baking soda and combine.
- Stir in the egg mixture onto the sweet potatoes mash. Add the cream and cornmeal and stir till you obtain a smooth batter.
- Pour into two 9 inch baking pans. Bake for about 40 minutes until golden brown.
