Ingredients:

  • 1 egg yolk
  • 1/2 cup heavy cream
  • 1 1/2 tsp cinnamon
  • 1/4 tsp vanilla extract
  • 2 2/3 cups white chocolate chips
  • 1/3 cup powdered sugar
  • 2/3 tsp nutmeg
  • 2 tsp rum (optional)

Instructions:

  1. Add the egg yolk, heavy cream, one teaspoon of cinnamon, 1/3 teaspoon of nutmeg, and the vanilla extract to a heatproof bowl. Fill a pot with water about one-third of the way and bring to a low simmer. Place the bowl on the pot and whisk for 2-3 minutes until the mixture thickens. Make sure the water doesn't touch the bowl.
  2. Add the chocolate and rum and continue stirring until it is melted. Remove from the heat and refrigerate until the mixture is chilled and firm.
  3. Combine the powdered sugar with the remaining cinnamon and nutmeg in a small bowl and set aside. Line a sheet tray with parchment paper and set it aside as well.
  4. To make the truffles, scoop 1 1/2 tablespoons of the mixture, roll it into a ball with your hands, and toss it into the bowl with the powdered sugar. Place them on the sheet tray and refrigerate until it's time to serve.

 Boozy Cherry Truffles

The amaretto-soaked cherries, the creamy ganache, and a thin layer of chocolate sprinkles in these truffles will get everyone in a frenzy from the very first bite. Who knew a combo so simple could taste so decadent?

Ingredients:

  • 1/2 cup freeze dried cherries
  • 2/3 cup amaretto liqueur
  • 2/3 cup heavy cream
  • 1 1/2 cups chocolate chips
  • 1/4 cup chocolate sprinkles

Instructions:

  1. Add the cherries and liqueur to a small bowl. Let them soak for 20 minutes. Once hydrated, drain the cherries with a strainer and set aside.
  2. Add the cream to a heavy-bottomed saucepan and heat over medium heat. Remove from the heat, stir in the chocolate chips, and whisk until the chocolate is melted. Refrigerate until the ganache mixture has thickened, about 45 minutes.
  3. Line a sheet tray with parchment paper and add the chocolate sprinkles to a small bowl.
  4. Scoop two tablespoons of the ganache and press into its center to create a small dent. Place a liqueur-soaked cherry into the dent and roll the ganache into a ball. Repeat the process with the remaining ganache and cherries and toss them into the sprinkles.
  5. Arrange them onto the sheet tray and refrigerate until it's time to serve.

3. Salted Caramel Banana Truffles

If you like your sweets with a side of salty, this truffle recipe should be at the top of your to-do list. Combining the natural sweetness of dates and bananas with peanut butter's inherent saltiness, it's like a flavor explosion in your mouth. Plus, the treat doesn't call for heavy cream, as it uses dates to create all that dairy-free creaminess. And that's always a bonus!

Ingredients:

  • 1/3 cup Medjool dates, pitted
  • 1/2 tsp salt
  • 1/4 cup smooth peanut butter
  • 3 tbsp freeze dried bananas
  • 1 cup chocolate chips

Instructions:

  1. Add the dates, bananas, and one cup of warm water to a bowl. Soak for 15 minutes. Drain the water and transfer the dates and bananas to a food processor. Pulse until you form a loose "dough." If it's too sticky, add warm water, one teaspoon at a time. Add the salt and peanut butter and pulse one last time.
  2. Line a sheet tray with parchment paper, scoop one tablespoon of the mixture and roll it into a ball. Repeat until you're out of "dough." Refrigerate until firm, about 2 hours.
  3. Add the chocolate chips to a heatproof bowl and microwave for 30 seconds. Stir and microwave for another 25 seconds. Stir one more time and continue heating in 15-second increments until the chocolate is melted.
  4. Dip the truffles into the chocolate and place them back onto the sheet tray. Refrigerate until it's time to serve.

4. Gingerbread Pineapple Truffles

It's not often that such a small dessert can stop us in our tracks, but these festive truffles had us from the get-go. The unique combo of gingersnap cookies and pineapple ushers in a new era of holiday flavors while the chocolate-pecan coating keeps things traditional.

Ingredients:

  • 3 cups gingersnap cookies, crumbled
  • 1 cup cream cheese
  • 1/3 cup freeze dried pineapples
  • 2 cups white chocolate chips
  • 1 cup pecans, finely chopped

Instructions:

  1. Add the pineapple and one cup of warm water to a bowl and soak for 15 minutes. Once hydrated, drain the water and squeeze the fruit to remove excess liquid. Transfer to a food processor.
  2. Add the cream cheese and cookie crumbs to the food processor and pulse until everything is combined.
  3. Line a sheet tray with parchment paper, scoop two tablespoons of the mixture, and roll it into a ball. Repeat until you're out of dough. Arrange them on the sheet tray and refrigerate until firm, about 2 hours.
  4. Place the chocolate chips into a heatproof bowl and microwave for 30 seconds. Stir and microwave for another 25 seconds. Give another good stir and continue heating in 15-second intervals until the chocolate is melted. Don't forget to stir in between the intervals. Stir in the chopped pecans.
  5. Dip the truffles into the chocolate and place them back onto the sheet tray. Refrigerate until it's time to serve.

5. Strawberry Cappuccino Truffles

While these truffles taste divine with just a teaspoon of espresso powder, adding a handful of freeze dried strawberries to the ganache takes them to a new level. The trick is to grind the fruit into a fine powder and blend it as you would with ground coffee. Bon Appetit!

Ingredients:

  • 2 cups white chocolate chips
  • 1/2 cup heavy cream
  • 1 tsp espresso powder
  • 1/4 cup freeze dried strawberries (sliced)
  • 1/2 tsp vanilla extract
  • 1/4 cup unsalted butter
  • 2 cups chocolate sprinkles

Instructions:

  1. Add the strawberries to a blender and pulse until they turn into fine powder. Set aside.
  2. Add the chocolate chips to a heatproof bowl and microwave for 30 seconds. Stir and heat again for 25 seconds. Stir one more time and continue microwaving in 15-second intervals until the chocolate is melted. Don't forget to stir in between intervals. Set aside.
  3. Combine the heavy cream, vanilla extract, espresso powder, and ground strawberries in a saucepan and bring to a simmer over medium heat. Please don't bring it to a full boil!
  4. Pour the mixture into the bowl with the chocolate and stir well to combine. Whisk in the butter, cover with cling wrap, and let cool at room temperature. Refrigerate until firm, about 2 hours.
  5. Line a sheet tray with parchment paper, scoop two tablespoons of the ganache and roll with your hands to form a ball. Repeat until all the ganache is used up.
  6. Add the chocolate sprinkles to a bowl, dip the truffles, and arrange them on the sheet tray. Refrigerate until it's time to serve.

  4. Sprinkle the topping, additional nuts, and sage over the sweet potato. Drizzle with olive oil and bake for about 20 minutes or until the topping browns and is crispy.

Broccoli and Cheese Casserole4

This thanksgiving side will spice up your thanksgiving dinner menu. Use freeze dried broccoli to save time for washing and cutting them up.

Ingredients

  • 4 cups freeze dried broccoli, rehydrated
  • 1 ½ cup chicken soup cream
  • 2 tablespoons melted  butter

Directions

  1. Preheat the oven to 350 degrees Fahrenheit.

5 Gravy Recipes That’ll Make Your Holiday Roasts Taste Special

December is finally here! And between those family potlucks, festive soirees, or a small get together with friends, chances are you'll need to roast a turkey/ham/meatloaf or two. And yes, pot roasts can be delicious on their own. But just a splash of gravy can take them to a whole new level. So, if you want to elevate your roasts (or even your side dishes) this year, the following gravy recipes are definitely worth the try.

1. Onion Gravy

This gravy recipe will be your new gold standard – for good reason! You see, despite its complex (almost restaurant-worthy) flavor, the sauce is very simple to make. In fact, all you need to do is add the ingredients to a saucepan and simmer to perfection. Who said making gravy was a hassle?

Ingredients:

  • ¼ cup unsalted butter (plus 2 tbsp)
  • 2 cups dried onions
  • 2 ½ cups beef stock
  • ¼ cup red wine
  • ½ tsp mustard powder
  • ½ tsp Worcestershire sauce
  • 1 tsp balsamic vinegar
  • 1½ tsp granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp dried thyme
  • Salt and pepper, to taste

Directions:

  1. Add the onions to a bowl along with 4 cups of warm water. Soak for 15 minutes. Squeeze away excess liquid and set aside.
  2. In a large saucepan, melt the butter (minus the 2 tablespoons) over medium heat. Add the onions and the sugar, turn the heat to low, and cook until the onions are caramelized (about 15-20 minutes).
  3. Add the wine and thyme, turn the heat back to medium, and simmer for 5 minutes.
  4. Then, add the stock, mustard, and Worcestershire sauce and reduce the heat to low. Season the gravy with salt and pepper to your taste and simmer for 20 minutes.
  5. Stir in the vinegar and cornstarch and simmer for a couple of minutes or until the gravy has thickened. Keep stirring during this step to prevent the sauce from sticking to the bottom of the saucepan.
  6. Whisk in the remaining 2 tablespoons of butter and stir until it's dissolved. Remove from the heat, let cool for a while, and serve.

Best paired with: Beef, pork, or lamb roast.

2. Mushroom Gravy

A great source of umami, the mushrooms in this gravy will boost the flavors of your roast, especially if we're talking about a turkey. To spare yourself the workload, you can prep the gravy a day in advance and store it in the fridge until ready to use.

Ingredients:

Directions:

  1. Add the mushrooms and onions to a bowl along with 3 cups of warm water. Soak for 15 minutes. Squeeze away excess liquid and set aside.
  2. In a large skillet, melt the butter over medium heat. Add the mushrooms, onions, thyme, and garlic and sauté for 5-6 minutes or until the mushrooms are nicely browned.
  3. Whisk in the flour and cook for 1 minute. Add the stock, stir, reduce the heat to low, and simmer until the gravy thickens.
  4. Remove from the heat, season with salt and pepper, and serve.

Best paired with: Turkey, beef, or pork roast.

3. Cherry Gravy

An unexpected twist on the classic sauce, this gravy recipe uses cherries' sweetness to add a kick to your roasts and side dishes (hello, mashed potatoes!). It also doesn't hurt that it requires just 5 ingredients and takes less than 30 minutes to make.

  • 2 cups chicken stock
  • 1 cup frozen cherries
  • 1/3 cup red wine vinegar
  • 2/3 red wine
  • 2 tbsp granulated sugar
  • Salt and pepper, to taste

Directions:

  1. In a bowl, add the cherries along with 2 cups of warm water. Soak for 15 minutes. Once hydrated, squeeze away excess liquid and set aside.
  2. Add the vinegar and sugar to a saucepan and simmer over medium heat until you have a sticky caramel-like sauce.
  3. Pour in the stock and the wine and keep simmering for 20-25 minutes or until the gravy has reduced by 2/3.
  4. Then, add the cherries and simmer gently for a couple of minutes more.
  5. Remove from the heat, season with salt and pepper, puree with an immersion blender and serve.

4. Apple Gravy

From salads to pancakes, apples can be enjoyed in a variety of ways. But just as we thought we cooked with the fruit in any way possible, we came across this gravy recipe. The dressing proves there's yet another way to enjoy apples, and this time (not next to) with your holiday roast.

Ingredients:

Directions:

  1. Add the apples and onions to a bowl along with 2 cups of warm water. Soak for 15 minutes. Once hydrated, squeeze away excess liquid and set aside.
  2. In a large saucepan, melt the butter over medium heat. Sautée the apples, onion, garlic, and thyme for 15 minutes until fork-tender.
  3. Pour in the stock and simmer for 10 more minutes.
  4. Whisk in the cornstarch and stir until the gravy has thickened.
  5. Remove from the heat, season with salt and pepper, puree with an immersion blender and serve.

Directions:

  1. Add the raspberries to a bowl along with 3 cups of warm water. Soak for 15 minutes. Squeeze away excess liquid and set aside.

  5. Place the breadcrumbs and eggs into two different bowls and line a baking sheet with parchment paper.
  6. Using your hands, form small balls with the mashed potato puree and dredge them first in egg and then in breadcrumbs.

  8. Bake for about 15 minutes, or until they turn gold.

6 small potatoes, rinsed

1 cup canned tomato sauce

Ingredients:
4 large sweet potatoes, washed and scrubbed
1 ½ cups TVP Beef Bits
1/3 cup dehydrated onion
2 tsp dehydrated garlic (granulated)
3 tsp chili powder
1 15-ounce can of tomato sauce
½ cup Parmesan or Cheddar cheese, grated
Salt and pepper, for seasoning
Directions:

  1. In a bowl, add the TVP beef bits along with 3 cups of warm water. Set aside for 15 minutes until the beef is rehydrated.
  2. Meanwhile, poke the sweet potatoes with a fork and microwave them for about 10 minutes until they are fork-tender.
  3. Cut them in half and scoop out some of the flesh to make room for the beef.
  4. Once the meat is rehydrated, drain it from the excess water, and transfer it to a skillet.
  5. Add a few tablespoons of water, and give the beef a light simmer.
  6. After a couple of minutes, add the onion, garlic, and chili powder and keep simmering until the meat is cooked through.
  7. Stir in the tomato sauce and simmer for 10 more minutes. Set aside to cool.
  8. Spoon the beef mixture into the potatoes and top with grated cheese.
  9. Bake for 5-10 minutes in a preheated oven or until the cheese is melted.

Desserts


5. Apple Oatmeal Cookies


Apples are to Christmas what pumpkin is to fall. That said, this delicious fruit shouldn’t be missing from the holiday table. Crammed alongside other tasty ingredients, such as oatmeal and cinnamon, this holiday recipe is a must for every host who wants to impress.
Servings: 15-20 cookies
Ingredients:
1 cup freeze dried apples
1 ½ cup rolled oats
¾ cup all-purpose flour
1 tsp ground cinnamon
¼ cup unsalted butter, melted
¼ cup brown sugar
1/2 cup granulated sugar
1 egg, beaten
½ tsp baking soda
1 tsp vanilla extract
White chocolate (melted), for garnish
Directions:

  1. In a bowl, add the freeze dried apples along with 1 cup of warm water. Set aside for 15 minutes until they are rehydrated.
  2. Preheat the oven to 400oF.
  3. In a bowl, add the flour, oats, baking soda, and cinnamon and combine well.
  4. Whisk in the butter, brown sugar, and white sugar.
  5. Once mixed, add the vanilla extract and the egg.

  7. Line a baking pan with parchment paper.
