How to Celebrate Banana Split Day, the Tasty Way

Packed with nostalgia and a lot of ice cream, the now-classic banana split is synonymous with summer. And yes, there's plenty to love about this dessert in its classic form (whipped cream is just the beginning). But, there are also dozens of ways to enjoy the treat outside the longboat bowl. So, in honor of National Banana Split Day(1) (August 25th), we rounded up our five favorite banana split recipes that cover every taste and occasion, from the traditional to the unique. So, how about we push some banana split boundaries this year?

The Classic Banana Split Sundae

Before we experiment with new takes on the classic treat, let's talk about its OG ingredients. In its classic form, the dessert consists of a banana cut in half lengthwise, three scoops of ice cream (which are sandwiched between the banana halves), and is usually topped with whipped cream, sauces, maraschino cherries, and crushed nuts. The following recipe is a great starting point.

Ingredients:

  • 1 banana, halved lengthwise
  • 3 scoops of ice cream (vanilla, chocolate, strawberry)
  • 3 tbsp whipped cream
  • 3 maraschino cherries
  • 2 tbsp syrup (chocolate or strawberry)
  • 1/4 cup crushed nuts (peanuts or walnuts)
  • 3 tbsp freeze dried strawberries (sliced)

Directions:

  1. Add the strawberries and 1/4 cup warm water to a small bowl. Soak for 15 minutes. Once hydrated, squeeze away excess liquid and set aside.
  2. Place the ice cream scoops in a row in an oblong dish. Sprinkle with the nuts and place the banana halves on each side of the plate. Top each scoop with one tablespoon of whipped cream and one maraschino cherry. Sprinkle with the strawberries and drizzle with the syrup.

1. Banana Split Ice Cream Cake

We'll be honest: This banana split recipe requires a little bit of legwork. But the result is well worth it! Just a slice of this no-bake cake, and you'll regret not making it sooner.

Ingredients:

  • 20 chocolate cookies
  • 4 tbsp unsalted butter, melted
  • 1 cup freeze dried bananas
  • 1 pint of chocolate ice cream
  • 1 pint of strawberry ice cream
  • 1 pint of vanilla ice cream
  • 2 cups fudge sauce
  • 1 cup whipped cream
  • 1/4 cup maraschino cherries
  • 1/4 cup chopped nuts

Directions:

  1. Add the banana slices and 2 cups warm water to a bowl. Soak for 15 minutes. Squeeze away excess liquid and set aside.
  2. Grease an 8x3-inch springform pan and line with parchment paper. Set aside.
  3. Add the cookies and butter to a food processor and pulse until you form a dough. Transfer to the pan and press into an even layer at the bottom of the pan. Top with the banana slices and freeze for 15 minutes.
  4. Remove the pan from the freezer. Using a spatula, spread the strawberry ice cream into an even layer on top of the crust. Top with one cup of fudge sauce, spreading it as evenly as possible. Freeze for 1 hour.
  5. Remove the pan from the freeze and, using a spatula, spread the chocolate ice cream over the strawberry layer. Top with one cup of fudge sauce and freeze for another hour.
  6. Remove the pan from the freezer and spread the vanilla ice cream on top of the chocolate layer. Cover with plastic wrap and freeze overnight.
  7. Before serving, release the cake from the pan, pipe the whipped cream into mounds on the outer edge of the cake, and top each with a maraschino cherry. Sprinkle with the chopped nuts.

2. Banana Split Parfait

A dessert in disguise, this parfait is the closest thing to eating a banana split for breakfast. It calls for yogurt instead of whipped cream and trail mix instead of nuts - so it'll fill you with energy first thing in the morning.

Ingredients:

Directions:

  1. Add 2 cups of warm water to a bowl and soak the bananas and strawberries for 15 minutes. Once hydrated, squeeze away excess liquid and set aside.
  2. Then, add 3 tablespoons of yogurt at the bottom of 3 parfait glasses. Top with the strawberries and pineapple, diving them equally between the glasses. Drizzle with the chocolate sauce and, again, divide the banana slices equally between the 3 glasses.
  3. Top with the remaining yogurt and sprinkle with the walnuts/trail mix. Refrigerate for 15 minutes and serve cold.

3. Banana Split S'mores

S'mores are perfect just the way they are. But in honor of National Banana Split Day, we decided to give the treat an upgrade by adding freeze dried bananas and strawberries to the mix. Now, if this recipe doesn't make you want to light up your backyard fire pit, we don't know what will.

Ingredients:

Directions:

  1. Preheat your grill on high-medium heat and break the crackers in half and lay them on a plate. Cut the chocolate into pieces and set aside.
  2. Divide the banana slices and strawberries between half of the crackers. Then, top with 2 ounces of chocolate.
  3. Skewer 2 marshmallows in each skewer and toast for about 20 seconds over the grill. Put them directly onto the chocolate, cover with the remaining crackers, and press down. Serve immediately.

4. Banana Split Kebabs

A kid-friendly spin on the classic banana split, this recipe is the perfect way to get your little one to eat some fruit. Plus, they're so easy to make that you can encourage them to help you during prep and get them excited about healthy cooking.

Ingredients:

Directions:

  1. Add 3 cups of warm water to a bowl and soak the strawberries, pineapple, and banana slices for 15 minutes. Once hydrated, squeeze away excess liquid and set aside.
  2. Thread two banana slices, two strawberries, and two pineapple bites onto a skewer and repeat the process until you're out of fruit.
  3. Drizzle the chocolate sauce over the "kebabs" and top with the chopped walnuts/granola. Serve immediately.

5. Banana Split Cupcakes

This baked version of a banana split will allow you to enjoy the classic dessert during wintertime when cakey and cozy is the name of the game. The frosting will make the dessert even more irresistible.

Ingredients:

  • 1 3/4 cups all-purpose flour
  • 2/3 cups confectioner's sugar
  • 1/2 cup unsalted butter, at room temperature
  • 1 egg
  • 3/4 cup whole milk
  • 1 cup freeze dried bananas
  • 1 tbsp buttermilk or kefir
  • 1/2 cup chocolate sauce
  • 1/2 tsp baking powder
  • A pinch of salt
  • 1 cup whipped cream
  • 1/4 cup chopped walnuts
  • 10 maraschino cherries

Directions:

  1. Add the banana slices and one cup of warm water to a bowl, and soak for 15 minutes. Once hydrated, squeeze away excess liquid and transfer them to a small bowl. Using a form, mash the bananas and set the mush aside.
  2. Add the flour, powdered sugar, baking powder, and salt to a bowl and combine. Add the butter and mix until the dough has a sand-like texture.
  3. Add the milk, buttermilk, and egg, and mix until you have a dough. Stir in the mashed banana and mix well until everything is combined.
  4. Preheat your oven to 350oF and line a muffin tin with liners. Fill each liner about 3/4 of the way with the batter and bake for 20-25 minutes or until a toothpick inserted in the cupcake comes out clean.
  5. Remove from the oven and set aside to cool completely. Top with whipped cream, drizzle with the chocolate sauce, sprinkle with the walnuts, and decorate with a maraschino cherry on top.

5 Falafel Recipes You'll Want to Make All Week

falafel recipes

Deep-fried, wrapped in a pita, and slathered in yogurt sauce, falafel has always been a staple for people in the Middle East. However, in recent years, the crispy fritter has graduated from a mere Mediterranean treat to a must-have dish on most Western restaurant menus.

So, in honor of this increasingly popular treat and the diet it represents (and since June 12th is International Falafel Day(1)), we rounded up our five favorite falafel recipes to prove that the fritter belongs on everyone's weekly menu.

And FYI, making falafel isn't as difficult as you may think. In fact, the whole endeavor (from chopping the chickpeas to frying them) takes less than 30 minutes – which is why falafel is the perfect weeknight meal.

1. Traditional Falafel

If this is your first time attempting to make falafel at home, then this recipe should be your new go-to. Easy and straightforward, it's perfect for total beginners – and even seasoned cooks who value convenience over a long list of ingredients and instructions.

Ingredients:

Directions:

  1. Add the chickpeas to a large bowl and fill it with enough water to cover the legumes. Soak for 15 minutes. Once hydrated, drain, and transfer them to a food processor fitted with a blade.
  2. Add the remaining ingredients and pulse until everything is finely chopped and combined. Transfer the mixture to the fridge and chill for 1 hour. Then, scoop spoonfuls and shape them into patties.
  3. Fill a medium pot with 3 inches of vegetable oil and heat over medium heat. Fry the falafel in batches for 3 minutes on each side or until crispy and golden brown.
  4. Transfer the patties to a dish lined with a paper towel to drain. Serve with rice, salad, hummus, or pita bread, and enjoy!

2. Green Pea Falafel

Let's be honest: Once we find a falafel recipe that works, it's easy to fall into the habit of making it over and over again. But there are countless ways to make falafel patties even more delicious – and one of them is to add green peas to the mix. Herbs pair great with the underrated vegetable, and the addition of lemon juice can take this combo to a whole new level.

Ingredients:

Directions:

  1. Add the chickpeas and peas to a medium pot, fill with enough water to cover, and bring to a boil over medium heat. Cook for 15 minutes until the chickpeas are fork-tender. Drain and transfer to a food processor fitted with a blade.
  2. Add the remaining ingredients and pulse until everything is finely chopped and combined. Transfer the mixture to the fridge and chill for 1 hour. Then, scoop spoonfuls and form them into patties.
  3. Fill a medium pot with 3 inches of vegetable oil and heat over medium heat. Fry the falafel patties in batches for 3 minutes on each side or until crispy and golden brown. Transfer them to a dish lined with a paper towel to drain.
  4. Serve in a wrap with hummus or tzatziki or as part of a nourish bowl/salad.

3. Curry Carrot Falafel

Carrot may work miracles for cake, oatmeal, and smoothies. But, it also does the trick for falafel as it makes the fritter taste (and look) all the more indulgent. Adding a pinch of curry powder also highlights the earthy taste of the carrots, creating a flavor mix that's sure to impress.

Ingredients:

Directions:

  1. Add the chickpeas to a pot and fill with enough water to cover. Bring to a boil and cook for 30 minutes or until fork-tender. Five minutes before removing the pot from the heat, add the carrots and cook for a while to soften. Once everything is cooked, drain, and transfer to a food processor fitted with a blade.
  2. Add the remaining ingredients and pulse until everything is finely chopped and combined. Transfer the mixture to the fridge and chill for 1 hour. Then, shape the mixture into patties.
  3. Fill a medium pot with 3 inches of vegetable oil and heat over medium heat. Fry the falafel in batches for 3 minutes on each side or until crispy and golden brown. Transfer the patties to a dish lined with a paper towel to drain.
  4. Serve the falafel patties inside warm pitas and top with tzatziki, hummus, or feta cheese.

4. Sweet Potato & Corn Falafel

This falafel recipe boasts everything you want in a filling dish, from comforting sweet potato to crunchy corn. To round out your meal, you can pair the patties with a bowl of long-grain rice or a refreshing tomato-cucumber salad.

Ingredients:

Directions:

  1. Add the corn and sweet potato to a medium pot, fill with enough water to cover, and bring to a boil over medium heat. Cook for 15 minutes until the potatoes are fork-tender. Drain and transfer to a food processor fitted with a blade.
  2. Add the remaining ingredients and pulse until everything is finely chopped and combined. Transfer the mixture to the fridge and chill for 1 hour.

5. Cauliflower Falafel

Even though chickpeas are the main ingredient in falafel, some versions swap the legume with other types of beans with impressive results. This recipe is the perfect example as it features navy beans instead of chickpeas and a generous serving of cauliflower for a dose of fiber.

Ingredients:

Directions:

  1. Add the beans to a medium pot, fill with enough water to cover, and bring to a boil. Cook for 20 minutes or until the beans are fork-tender. Five minutes before removing the pot from the heat, add the cauliflower, and cook to soften. Drain the water using a fine sieve and transfer the beans and cauliflower to a food processor fitted with a blade.

5 Irresistible Hamburger Recipes

hamburger recipes

Let’s face it: hamburgers are an American staple made from beef. Most families gather around for backyard grilling, and burgers never miss. And for a good reason, although hamburger is classified as fast food with high calories, sodium, and refined carbs, it contains essential nutrients such as iron, zinc, B vitamins, and high-quality protein with every bite.

Do you want to enjoy hamburger recipes guilt-free? Pair up with fruits and vegetables to increase your daily consumption and add a boost of nutrition. Add veggies such as spinach or red peppers and top with pineapple, tomatoes, or mangos. Ensure that you use whole-grain buns, gluten free buns/ bread, or lettuce wraps and low-fat cheese or avocado to eat the food you love in a healthy and nutritious form.

A brief overview of National Hamburger Day

The actual origin of the invention of the hamburger is not very clear since many people have claimed it. One theory claims that it originated in Germany, and it was named after Hamburg, the second-largest city in Germany. Another theory by the Library of Congress claims that in 1890 Louis Lassen, a famous businessman, placed a piece of grilled meat between two pieces of toast since he was in a rush and wanted a quick meal. The controversy is because the Chinese have been doing the same since 1045.1

Despite its origin, we must agree that the worldwide sensation is the best invention of time. For sure, National Hamburger Day will be celebrated for a long time,  and what a better way to mark the day on May 28th than to make these five irresistible hamburger recipes in the comfort of your home.

5 Chili Recipes to Get Creative With

5 Chili Recipes to Get Creative With

chili recipes
Photo by Markus Spiske from Pexels

Let's be honest: Chili can be a controversial subject. And that's because some cooks swear by meat, while others believe legumes are the only way to make the dish shine. In some cases, cooks even add their own twists to make chili pop, whether that's a shot of beer, a tablespoon of soy sauce, or a dollop of peanut butter (ps: don't knock it 'till you try it!).

But no matter which way you see it, this cold weather classic is synonymous with experimentation, and National Chili Day(1) (February 24th) is the perfect excuse to get creative with your batch. So, if you're looking for ways to spice up your weeknight meals, these five chili recipes will allow you to experiment with the dish, whether you want to stick to the basics or go the extra mile.

1. Classic Chili

Using both meat and beans, this chili recipe will satisfy everyone you serve it to. It's also very simple to make and calls for bare bones ingredients. This means it's perfect for a weekday when time is scarce, and you need something to hit the spot ASAP. Pair it with some nachos or a grilled cheese sandwich for a complete meal.

Ingredients:

Directions:

  1. In a bowl, add the beans and 2 cups of water. Transfer to a pot, fill with water and cook until fork-tender (about 20 minutes). Remove from the water and set aside.
  2. Add the beef bits and 3 cups of water to a bowl and soak for 15 minutes. Remove excess liquid and set aside.
  3. Heat the olive oil over medium heat in a large pot. Sautée the onion for 2-3 minutes. Then, add the beef and cook for 6-7 minutes.
  4. Stir in the sugar, cumin, garlic, chili powder, and tomato paste and sautée for a while longer (1-2 minutes).
  5. Add the broth, tomato sauce, and beans to the pot and stir to combine. Reduce the heat to low and bring the chili to a boil. Simmer for 20 minutes, stirring occasionally. Remove from the heat and serve.

2. Black Bean & Corn Chili

Contrary to popular belief, you don't always need meat to make chili taste good – and this recipe proves just that. Made with black beans, it's just as filling as its meaty counterparts and slightly more crunchy thanks to the corn. For a spicy kick, add a little bit of jalapeno.

Ingredients:

Directions:

  1. In a bowl, add the beans and 2 cups of water. Transfer to a pot, fill with water and cook until fork-tender (about 20 minutes). Remove from the water and set aside.
  2. Add the corn to a bowl along with 1 cup of warm water and soak for 15 minutes. Once hydrated, squeeze away excess liquid and set aside.
  3. In a pot, heat the olive oil over medium heat. Sautée the mushrooms, onion, and bell pepper for 2-3 minutes. Stir in the remaining ingredients, reduce the heat to low, and bring to a boil. Simmer for 20 minutes. Remove from the heat and serve.
  4. (Optional Step) To thicken the chili, remove 1 cup of the soup and pulse in a food processor. Transfer back to the pot and stir.

3. Meaty Mushroom Chili

For those days when you feel like indulging (but don't care for all the meat), this easy chili recipe is the way to go. Swapping mushrooms for meat, it's slightly less heavy than most chilis but just as tasty. Plus, it comes together in a slow cooker, which is always a bonus.

Ingredients:

Directions:

  1. In a bowl, add the beans and 4 cups of water. Transfer to a pot, fill with water and cook until fork-tender (about 20 minutes). Remove from the water and set aside.
  2. Heat the olive oil over medium heat in a small skillet. Sautée the onion for 2-3 minutes. Transfer to the slow cooker.
  3. Add all the remaining ingredients to the instant pot (except for the corn) and cook on high pressure for 10 minutes.
  4. Release the pressure, stir in the corn, and cook for another 3 minutes. Top with grated cheese and serve immediately.

4. Thai-Style Chicken Chili

Inspired by Thai cuisine and its flavors, this chili recipe is on the fancier side. But that doesn't mean you shouldn't give it a shot. In fact, it's super easy to follow and calls for simple ingredients - which means you don't have to stock up on anything exotic (or, to put it simply, expensive).

Ingredients:

Directions:

  1. Add the beans and chickpeas to a bowl along with 3 cups of water and transfer to a pot and cook until fork-tender (about 20 minutes). Strain and set aside.
  2. Add the chicken to a bowl along with 3 cups of warm water and soak for 15 minutes. Once hydrated, squeeze away excess liquid and set aside.
  3. Add the vegetable oil to a large pot and heat over medium heat. Sautée the chicken for 4-5 minutes or until it's lightly brown. Stir in the onion and sautée for another 3 minutes.
  4. Then, add all the remaining ingredients, reduce the heat to low, and bring to a boil. Simmer for 30 minutes or until the potatoes are cooked through. Remove from the heat and serve.

5. Beer Chili

Perfect for games days (or simply when you want to switch things up for dinner), this beer chili is a definite crowd-pleaser. While several types of ale can do the trick, we'd encourage you to opt for stout beer as its rich, malty flavor pairs excellent with beef.

Ingredients:

Directions:

  1. Add the beans to a bowl along with 3 cups of water and bring the water to a boil and cook the beans until fork-tender (about 20 minutes). Strain and set aside.
  2. In another bowl, add the beef bits and 4 cups of warm water. Soak for 15 minutes. Once hydrated, squeeze away excess liquid and set aside.
  3. Heat the oil in a large pot over medium heat. Sautée the onions for 2-3 minutes. Then, add the cayenne pepper, cumin, and garlic and sautée for one more minute.
  4. Add the beef and cook for 10 minutes or until lightly browned. Stir occasionally so that the meat doesn't stick to the bottom of the pot.
  5. Mix in the tomatoes and beans and bring to a simmer. Stir in the beer and molasses, season with salt and pepper, and cook for another 5-10 minutes until the chili thickens. Remove from the heat and serve.
