4 Creative Egg Recipes That Give the Orbs a Serious Upgrade

Anyone who's into high-protein, low effort meals knows the value of hardboiled eggs. Packed with energy-boosting nutrients, the bite sized orbs can power you up any time of the day and take almost zero time to make. But as nutritious and convenient as they may be, eating them on their own can get too boring too fast. So, to get you out of the egg rut (and celebrate World Egg Day(1) the egg-citing way), we rounded up our 4 favorite egg recipes that put their own twists on the humble egg and will make you use up that carton in no time.

1. Parmesan Egg-in-a-Hole

You've likely seen (or enjoyed) egg-in-a-hole before – but this version brings the breakfast staple to a whole new level. Laced with cheese and bell peppers, the dish is a step-up from the usual egg-and-bread combo and could pose as a tasty start to your hectic mornings.

Ingredients:

Directions:

  1. Using a round cookie cutter, cut the center out of the bread slice. Save both pieces and set aside.
  2. Spread the butter all over the surface of a frying pan and heat over medium heat.
  3. Place both bread pieces on the frying pan and toast until golden brown (1-2 minutes).
  4. Once ready, flip both the slice and the cut-out and crack an egg directly into the hole.
  5. Cook until the egg white is white (5-6 minutes). Note that the yolk will be a little runny.
  6. Top with the cheese and bell pepper flakes and season to taste.

2. Egg Salad Sandwiches

Egg salad sandwiches often get a bad rep. But when prepared correctly, they can be a filling and nutritious meal. This take ditches the mayo for Greek yogurt and adds corn to the mix. For an even healthier twist, opt for whole-grain or sourdough bread.

Ingredients:

  • 4 slices of bread
  • 2 large hard-boiled eggs
  • ¼ cup Greek yogurt
  • 1 tsp Dijon mustard
  • 1 tbsp dried corn
  • ¼ tsp smoked paprika (optional)

Directions:

  1. Add the corn to a tall glass along with 3 tbsp of warm water. Soak for 15 minutes. Squeeze away excess liquid and transfer to a small bowl.
  2. Peel and chop the eggs into bite-sized pieces and place them in the bowl.
  3. Add the remaining ingredients and mix gently until combined.
  4. Take two slices of bread and place half of the egg mixture on each. Add the remaining bread slices on top and enjoy.

3. Baked Eggs with Tomato & Spinach

Swapping fried eggs for oven-baked (that's new!), this recipe could be described as a cross between shakshuka and casserole. And even though it's all types of indulgent, it's still laced with healthy ingredients like tomato sauce and spinach for an extra vitamin kick. That's a win-win!

Ingredients:

Directions:

  1. Add the spinach to a bowl along with ½ cup of warm water. Soak for 15 minutes. Squeeze away excess liquid and set aside.
  2. Preheat the oven to 400oF.
  3. Heat the olive oil over medium heat and sautée the onion and garlic for 7-8 minutes. Add the spinach and tomato flakes and sautée for 3 more minutes.
  4. Add ¼ cup of water, turn the heat to low, and bring to a boil. Then add the spices and simmer for 5 minutes.
  5. Transfer the mixture to 2 ramekins. Then, crack an egg into the center of each ramekin and bake for 15 minutes.

4. Scrambled Egg Tacos

Perfect for breakfast, lunch, brunch, and dinner, this egg recipe is as versatile as it is easy. Calling for less than 10 ingredients (including seasonings), it requires minimal effort and has enough wow factor to win anyone you serve it to.

  1. Add the sausage, bell peppers, and onions to a bowl along with 2 cups of warm water. Soak for 15 minutes. Squeeze away excess liquid and set aside.
  2. Heat the olive oil in a large saucepan and sautée the hydrated mixture for 10 minutes.
  3. Stir in the eggs and season with salt, pepper, and garlic. Cook for 4-5 more minutes or until the eggs are set. Make sure to stir the eggs gently so that the mixture doesn't stick to the bottom of the pan.
  4. Divide the scrambled eggs into the 5 taco shells and top with cheese. Serve immediately.
